Pumpkin Pie Oatmeal
Fall is officially here! It’s still in the 90s here in Northern Virginia, but one can dream for cooler temps, falling leaves, and pumpkin flavored everything. I’m going to be real “basic” and share a great fall oatmeal recipe. There is no better way to start the day than with a warm bowl of oatmeal that smells AND tastes like fall! Did you know how nutritious pumpkin is for you? And no, pumpkin spice lattes from Starbucks don’t count. Pumpkin is nutrient dense and packed with great vitamins and minerals while being low in calories. High in Vitamin A & C, and also a great source of iron. And, it’s delicious!
This recipe is so easy and only takes about 10 minutes. You can always add more of an ingredient to tailor it to your taste preferences.
First, add rolled oats and pour cashew milk (almond milk would work too!) to a small pan and cook over medium heat. Bring to a simmer. Add all the other yummy ingredients and stir to combine, lower heat to medium-low and cook uncovered until desired consistency (about 10 min). You can mush the bananas a little as you stir if you like. Stir occasionally so the oats don’t stick to the bottom of the pan. Once done to your liking, add to bowl and add your favorite topping! I only had slivered almonds on hand, so I used those. Add a sprinkle of chia seeds, more banana slices, and drizzle maple syrup. Delicious!
